Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.


2 lbs. ground beef sirloin
1 1/2 tsp. sea salt
1 tsp. fresh ground pepper
1 tsp. fresh ground peppercorn medley
1 med onion
1tsp olive oil
2 tsp. butter
1 cup balsamic vinegar fig jam
6 slices gouda cheese
6 french rolls toasted



slice med. size onion into thin slices.place in non stick skillet olive oil and butter till melted, add onions and cook over med heat until carmelized in small saucepan add the balsamic vinegar and cook over med. heat and reduce to about half. being careful not to overcook.(it will get too thick) place ground sirloin into bowl add salt and peppers.mix and form into 6 patties. cook patties on the grill to desired doneness. add gouda cheese slices on top of burgers till melted. slice and toast the rolls lightly on grill. spread fig jam on roll,drizzle with balsmic add burger and top with carmelized onions. serve with your favorite red wine!
