A Tank Full Turkey Burger

Ingredients

Spinach Turkey Topping:
½ cup small curd cottage cheese
½ cup sour cream
2 tablespoons Mayonnaise
1 package Spinach Dip
PJ’s Sauce:
¼ cup ketchup
1 teaspoon Balsamic Vinegar
3 tablespoons grape jelly
1 tablespoon Spicy Hot Mustard with garlic
¼ cup brown sugar
PATTIES:
1 ½ pounds ground turkey breast
1/3 cup kohlrabi grated extra fine
2/3 cup yellow zucchini grated
1 cup crushed corn flakes
1 teaspoon Kosher Salt/ or Sea Salt
1/2 teaspoon cayenne pepper
1 teaspoon cinnamon
1 teaspoon coriander
1 teaspoon allspice
1 small yellow onion finely diced
1 egg
3 tablespoons Parmesan Cheese
3 slices black forest ham

Instructions

To make the Spinach turkey topping combine the cottage cheese, sour scream, mayonnaise and spinach dip in bowl. Mix well and chill for ½ hour. To make PJ’s sauce combine the ketchup, balsamic vinegar, jelly, mustard, and sugar in a small bowl. Mix well and chill until needed for burgers. Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make the burgers combine the turkey meat with the grated kohlrabi, grated zucchini, the crushed corn flakes, kosher salt, cayenne pepper, the cinnamon, the coriander, allspice, the diced onion, egg and parmesan cheese. Mix all together. Divide turkey mixture into 12 equal size burgers. Slice black forest ham into halves. Take two burgers and place a ½ of ham slice between the two burgers – pinch/seal edges of turkey burgers together. Place the 6 Turkey/ham burgers onto medium hot grill, cover and cook 5-8 minutes until brown on bottoms and meat is turning white half way thru the burger. Flip burgers and spoon on top of each burger with PJ’s sauce, letting the sauce spill over the edges of burger and finish cooking burger for another 5-8 minutes. Lightly toast sesame seed buns cut side down on outer edges of grill. Place turkey burger on bottom portion of toasted bun and then place a generous spoonful of Spinach Turkey Topping to the edges of sesame seed toasted bun top, place on burger and serve. Makes 6 burgers
