A Taste of Portugal Burger

Ingredients

A Taste of Portugal Burger Serves 6
Patties:
1/2 lb Hot Chorizo Sausage, casing removed
4 oz White Onion, diced
1 1/2 lb Ground Beef
2 Tbsp Portuguese Allspice
2 Tbsp Salt and Pepper
1 oz Oil, for grill rack
6 ea Slices Queijo Natural Cheese
Bom Petisco Brand Hot and Sweet Pepper Spread:
1 lb Roasted Red Peppers, deseeded
2 ea Small Red Chilis, (Hot red finger chilis if possible)
2 Tbsp Garlic, minced
4 Tbsp Oil 1 Tbsp
Salt
Buns and Assembly
6 ea Sweet Portuguese Muffins, also called European Sweet Muffins 6 Tbsp Butter 6 Tbsp Grainy Mustard

 

Instructions

Preheat a charcoal grill to a medium heat. Using a blender, mince the chorizo until paste like. Add the onions, and continue to pulse. Remove from blender and place in a large mixing bowl. Combine the chorizo mixture with the ground beef, salt and pepper, and allspice seasoning. Using the same blender, pulse the portuguese rolls until the become like fine crumbs. Add bread crumbs to beef mixute until tight. Form six patties, and set aside, until ready to grill. Prepare hot and sweet pepper spread by combining all ingredients in a food processor until spreadable. Set aside until needed. Grill burgers. Grease grill rack with oil. Place burgers on rack, and cover. Flip burgers after 5 minutes. Grill for five minutes longer. While burgers are grilling for the last few minutes, split muffins apart and spread with butter. Place on the grill until toasty and warm. Place cheese on burgers, move burgers to cooler part of grill and cook for another 3-5 minutes until well done, covered the entire time. To assemble burgers, place burger with melted cheese on bottom of portuguese muffin, spread each with 1 Tbsp of mustrd top that with sweet and hor pepper spread. Place Muffin top on top of burger and enjoy. Serves 6 Adam Ricard
