Air Capital Bruschetta Burgers with Cowtown Mustard Sauce on Toasted Amber Waves of Grain

Ingredients

Cowtown Mustard Sauce:
1/2 cup Sutter Home Moscato Wine
1/8 cup Colvita Olive Oil
1 teaspoon Tabasco Chipotle Sauce
6 tablespoons Dijon Mustard
1/8 cup shredded onion
2 garlic cloves shredded
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon salt
1/3 cup shredded Parmigiano Reggiano cheese

Patties:
1 cup Colvita Olive Oil (1/2 cup for brushing grill grates and 1/2 cup for brushing bread for later use)
1 egg beaten
1 teaspoon Tabasco Chipotle Sauce
1/8 cup Sutter Home Moscato Wine
2 grated garlic cloves
1/4 cup shredded onion
1 teaspoon salt
1 teaspoon basil
2 pounds ground chuck hamburger
12 slices french bread (about 1 loaf minus the heels cut into 1/2 inch slices)
6 slices mozzarella cheese
1/8 cup basil
1 cup finely chopped tomatoes

 

Instructions

Preparation Time: 25 minutes
Cook Time: 20 minutes

Brush grill grates with 1/2 cup olive oil and preheat gas grill to medium heat.

For preparing the sauce, combine in a small fire-proof saucepan wine, olive oil, chipotle sauce, mustard, onion, gralic, basil, oregano, salt, and cheese, and stir with a spoon until well blended. Set aside to cook later on grill.

To make the patties,in a large bowl combine, egg, chipotle sauce, wine, garlic, onion, salt, basil, and hamburger, and mix well with a wooden spoon or your hands. Shape into 6 patties.

To prepare the bread brush the remaining olive oil evenly over both sides of 12 slices of bread.

When the grill is ready place saucepan on grill stirring occasionally while burgers cooking. Place burgers on the grill rack at least one inch apart and cook burgers on the first side 6-7 minues and turn to cook an additional 6-7 minutes until cooked through, being careful to not overcook. During the last 2 minutes of cooking burgers, place bread slices on grill and begin to lightly toast. Toast 2 minutes on the first side checking frequently with a spatula and turn placing mozzarella cheese slices on 1/2 bread. Sprinkle basil and tomato evenly over cheese and toast an additonal 1-2 minutes or until cheese starts to melt. Check frequently to not burn.

To assemble the burgers place patties on bread without cheese and spread 1 tablespoon sauce on each pattie and place cheese bread either on plate or habmburger bread on top of cheese bread as these burgers may be served open-faces or side by side. Serve remaining sauce alongside burgers for guest use.
