Ingredients

Pickled Cucumber Chips
1 small cucumber peeled and sliced
½ cup water
1 cup white distilled vinegar
6 cloves garlic
2 green serrano chilis, split lengthwise
1 tablespoon pickling spice
1 tablespoon mustard powder
¼ cup sugar
1 ½ tablespoon kosher salt

Coca-Cola Relish
I can of coca-cola
½ cup diced onion
2 tablespoons malt vinegar

French Fry Patty
3-4 Russet potatoes (2 cups grated)
1 egg
¼ cup plain breadcrumbs
½ teaspoon onion powder
1 teaspoon kosher salt
¼ teaspoon fresh ground black pepper

Secret Sauce
3 tablespoons mayonnaise
½ tablespoon chipotles in adobo sauce, minced
2 tablespoons ketchup
2 ¼ pound ground chuck (20% fat)
6 sliced sesame seed buns
6 slices medium cheddar cheese
2 cups chopped iceberg lettuce
18 slices of tomato
12 strips thick-cut smoked bacon
vegetable oil for rubbing on grill rack
vegetable oil for frying french fry patties

 

Instructions

Heat the gas grill to medium-high. In a small fire-proof pot(no lid)add water, vinegar, garlic, chilis, pickling spice, mustard, sugar and salt and bring to a boil. Simmer for 20 minutes. Peel and slice the cucumber into 24 ¼" slices and place in a medium bowl. Strain and pour hot liquid over the sliced cucumbers in the bowl. Do not cover and let stand for 90 minutes.
To make the coca-cola relish place a small fire-proof pot (no lid) on medium-high grill and pour in 1 can of coca-cola and add the chopped onions. Allow the coke and the onions to reduce over the heat until there is no more liquid, about 1 one hour. Remove from heat and add malt vinegar, mix and set aside.
To make the french fry patties peel and grate the potatoes with a box grater over a bowl. Squeeze out any excess liquid from the grated potatoes. Add the egg, breadcrumbs, onion powder, salt and pepper and mix well. In large fire-proof skillet over a med-high heat grill fill with the vegetable oil to about ¼" up to the sides of the skillet. Shape the mixture into 6 equal round patties and fry in the oil about 2-3 minutes on each side until golden brown and crispy. Set on a paper towel to drain. Cook the bacon in a fire- proof skillet over medium-high heat until browned. Drain on a paper towel to remove excess grease.
Mix all the ingredients together for the secret sauce and set aside. After 90 minutes drain the liquid from the cucumbers and discard. Shape the ground chuck into 6 equal patties leaving a small indention in the center of the patty to allow the patty to cook evenly. Set the grill on medium-high and rub the grill rack with a towel and a little vegetable oil to prevent sticking. Place the patties on the rack and grill for about 3-4 minutes on each side. For the last 30 seconds of grilling place the cheese on the patties to melt. Too assemble the burger top each bottom and top half with the secret sauce. Add 4 slices of cucumber chips, 3 slices of tomato and chopped lettuce to the bottom half of the bun. Top with a french patty and smother the patty with the coca-cola relish. Then add the hamburger patty with the cheese, followed by the bacon strips and the top of bun.
