All the Best Burger

2 lbs of fresh ground sirloin
8 slices of bacon cooked
1/2 red onions chopped fine
1-2 t garlic, fresh or dried
1 T horseradish
1 T chilli sauce
4 good slices sharp cheddar cheese
4 slices fresh pineapple grilled
sliced red onions, side garnish
4 T fresh pasley flat italian chopped fine
1 t paprika coarse salt
fresh ground pepper
4 poppy seed kaiser rolls or something similar
3 T oil curry katsup
3/4 catsup
1 T curry powder
salt, pepper, cayenne to taste
chipote mayonaise
3/4 cup mayonaise
2-3 chipote peppers canned
1 T lemon juice
1-2 T cilantro chopped
salt and pepper to taste
add all ingredients to blender and puree until pleasing consistency



1. Prepare ground beef:place beef in bowl large enough to contain several ingredients plus the beef. Add chopped onions, garlic, chilli sauce, horseradish, salt and pepper, and parsley. Mix ingredients well. Form 4 patties. Set aside on plate in refrigerator. 2. cook bacon strips until bacon is crisp. Drain on paper towel. Set aside until ready to use. 3. Prepare grill for pineapple. Brush grill lightly with oil. Turn heat to medium. Brush pineapple lightly with paprika. When grill is hot place pineapple on grill. Cook 3-4 minutes each side or until pineapple is grilled but not black. Take off and set aside until ready to use. 4.Prepare grill for burgers. Brush grill with olive oil. When hot add burger and cook until desired doneness. Also lightly toast rolls just before burgers are done. 5. Assemble all ingredients: roll, burger, cheddar cheese, pineapple slices, 2 strips of bacon and red onion slices. Serve with fries and choice of dressings. To amp up the heat a touch add chopped jalapeno to the mix.
