Anchovy Tomato Burger

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

I love the taste of anchovy


3 TBS minced sweet onion (1.5 fl oz )
3 fluid ounces minced black olives drained ( 6 TBS )
3 TBS tomato paste (1.5 fl oz )
1 TBS sugar
1TBS garlic powder
1.5 tsp ground thyme
1.5 tsp ground coriander
3 TBS anchovy paste ( 1.5 fl oz )
1 TBS Red Zinfandel wine
1.5 pounds lean ground beef
6 hamburger buns


Make the sauce about 2 hours before burgers are to be grilled. Mince onions and olives as necessary. Add to tomato paste. Add sugar, garlic powder, ground thyme, ground coriander, anchovy paste and mix . Add wine and mix. Refrigerate until burgers are grilling. Divide ground beef into 6 patties about the size of the buns. Grill patties about 4 minutes per side or as needed by your grill. While patties are grilling spread sauce on one side of the buns. When patties are done put them in the buns. Serve at once.
