Annie Oakley’s Bison Burgers

2 Tablespoons butter
1 chopped Vidalia onion
2 # ground buffalo meat
2 teaspoons kocher salt
3 turns of pepper mill
1/4 cup beef boullion
1/4 cup Sutter Home Merlot
Malt vinegar
6 Kaiser Rolls
sun-dried tomato pesto
6 Artichoke bottoms
Bean sprouts



Heat grille to 350 degrees dice (small) onion Put 2 Tablespoons butter in cast iron skillet and saute onion until transparent Place buffalo meat in bowl add diced, cooked onions Add kocher salt add pepper add beef boullion add merlot Mix lightly Form into 6 burgers Place burgers on grille Cook till nicely browned on first side Slice buns Toast on grille (top rack) Turn burgers and finish cooking another 5 minutes Remove toasted rolls from grill and spread sun-dried pesto on each side of roll Place artichoke heart on bottom portion of roll Place 2 Tablespoons of sprouts on top of burgers Top with remaining part of roll Open wide and bite into the delicious combination of nutrition and taste.
