Apple-Caraway Bleu Burgers

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients:

3 Tbsp. whole caraway seeds
1-1/2 lbs. ground beef
1 large or two small Fuji apples, cored and cut into six 1/4″ thick slices
2 Tbsp. onion powder
1 Tbsp. salt
2 Tbsp. freshly ground black pepper
4-5 Tbsp. sweet-hot mustard
4 Tbsp. creamy Gorgonzola or blue cheese, softened to room temperature
6 Kaiser rolls, sliced in half lengthwise
Olive oil for grill

Instructions:

In a mortar & pestle, pound caraway seeds until “broken” and fragrant. In a large bowl, combine beef, 2 Tbsp. caraway, onion powder, salt & pepper. Combine well and form into six patties.

Toss apple slices with 1-2 T. mustard and remaining caraway.

Preheat a gas grill over medium-high heat and brush with olive oil. Cook patties 5-8 minutes per side to your taste, turning once. Grill both slices of apples until just blackened and heated through but still crunchy (about 5 minutes total).

Lightly toast rolls on cut side. Remove from heat and spread one side with equal portions of remaining mustard, spread the other side with cheese. Later bottom of rolls with one burger, one apple slice and remaining top of bun.
