Arlingtons Spicy Surf and Turf Burger

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.

Ingredients

Prawn Marinade:
2 tablespoons sugar
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 tablespoon paprika
1 teaspoon salt
1 teaspoon curry powder
1 teaspoon cumin powder
1/2 teaspoon ground red pepper
Bacon:
9 slices of uncooked -pepper bacon
Prawns:
18 uncooked deveined prawns. use 26/30 count size.
Beef:
2 1/2 pounds of freshly ground beef (23% beef fat content)
2 1/4 tsp kosher salt
6 egg sesame seed hamburger buns
8 oz. jar of mayonnaise
1 sliced red onion
1 sliced large tomato (beefsteak)
1 head of bibb lettuce
oil for the grill rack

 

Instructions

Prawns: Remove casings and tails from prawns, put into a clean bowl, set aside. Prawn Marinade: In a clean quart size bowl add sugar, olive oil, white wine vinegar, paprika, salt, curry powder,cumin and red pepper. Mix marinade till incorporated, leaving no lumps. Pour half of this marinade over the cleaned prawns,set the other half aside for later use.Let the prawns marinate for one half hour. Preheat the gas grill to medium high heat. About 375 degrees. Keep the lid closed. For the bacon: take the nine slices of bacon and cut each one in half (set aside) For the Prawns: Have ready 3 metal shish kabob skewers. Remove prawns from the marinade one at a time threading them six per skewer. (set aside) For hamburgers: Combine beef with salt in a large bowl. Toss gently to incorporate. Handling the meat gently, divide into six equal portions and form patties to fit the sesame seed buns. Cover with plastic wrap and set aside. Brush preheated grill rack with oil. Place bacon slices on grill. Cook about three minutes each side till just crispy.Put bacon in a heat proof dish sitting on the coolest part of the gas grill. Next take the three skewers of prawns and place them on the grill rack where the heat is hottest. Grill till prawns begin to turn opaque, about 2 minutes. Flip them over for about 30 more seconds and place them on top of the bacon thats resting on the grill. Place the meat patties on the rack over hottest part of the grill.Cover and cook about four minutes for medium rare then turn patties over.Take the one half reserved marinade and brush this librally over the burgers as they finish grilling (about four more minutes)During the last few minutes place sesame seed buns cut side dowm on the outer edges of the grill to toast lightly. To assemble burgers: Spread a generous amount of mayonnaise over the cut sides of the toasted buns. on each bottom side add a burger, three prawns, three bacon slices, brush on more reserved marinade, onion slice, tomato slice and bibb leaf lettuce. Add the burger tops, slice in half and serve.
