Atlantic-Pacific Chicken Burgers with Tangy, Tart & Sweet Sauce

For Chicken Burgers
2 pounds of ground chicken
2 tablespoons of Texas Pete Hot Sauce
1 tablespoon of cayenne pepper
1 tablespoon of parsley
1 tablespoon of basil
1 tablespoon of oregano
1 tablespoon of thyme
1 clove of garlic, minced
1 tablespoon of paprika
1 small red onion, grated
3 tablespoons of butter, cubed
1 lemon, zested

For Tangy, Tart & Sweet Sauce
1/4 cup of dried cranberries, chopped
1/4 cup of Chardonnay
1- 8 oz plain yogurt
2 tablespoons of mustard
4 tablespoons of honey
1 lemon, juiced and zested
1 small cucumber, peeled and diced
1 carrot, shredded
1/4 cup of maple roasted pecans, chopped

For Buns & Toppings
6 hamburger buns, soft variety
4 oz of butter
5 oz of arugula, washed
2 large tomatoes, sliced
1 red onion, sliced thinly



In a large bowl add your ground chicken, hot sauce, cayenne pepper, parsley, basil, oregano, thyme, garlic, paprika, onion, butter and lemon zest. Mix the mixture thoroughly to incorporate all of the ingredients. After mixture is combined form mixture into six patties, sprinkling salt and pepper on each side to season. Cook the chicken burgers on medium heat for 9 minutes on each side until cooked completely through.

To make Tangy, Tart & Sweet Sauce, in a small bowl add dried cranberries and Chardonnay and let mixture sit for a while until the cranberries have dehydrated. Usually takes about 12 minutes. In a large bowl add your yogurt, mustard, honey, lemon juice, lemon zest, cucumber, carrot, pecans and hydrated cranberries minus the liquid and mix. Set aside until burgers are ready to be assembled.

Take your hamburger buns and spread some butter on each side of the bun toasting for about a minute, until golden brown. On the bottom half of the bun add your arugula, then your sliced tomatoes, then your sliced onions, then add your chicken burger then on top of your burger add your Tangy, Tart & Sweet Sauce add the other bun on top of the burger and serve. Serves 6.
