Auntie’s ” Two Napkin” Fiesta Burger – Revised Edition

Ingredients

Avocado Dressing:
1 cup of sour cream
1 California avocado smashed
1 Tsp of fresh squeezed lime juice
1 Tsp of fresh cilantro (chopped)
Kosher Salt
Fresh ground black pepper

Patties:
2 lbs of ground roud
1 Tbsp of finely chopped Jalapeño
1/2 cup of finely shredded Vidalia onion (including onion juice)
1 Tbsp of cumin
1 Tbsp of chili powder
1 Tsp of kosher salt
1 Tsp of ground black pepper
Colivata Extra Virgin Olive oil, for brushing on the grill rack
6 large Keiser buns (slided)
6 slices of Monterey Jack cheese
3 cups chopped Ice burg lettuce
3 Roma tomatoes seeded and diced  Hot Sauce (or favorite hot sauce)

 

Instructions

Directions To make the dressing, combine sour cream, smashed Avocado, lime juice, cilantro and mix well, add salt and pepper to taste. Chill until ready to use. Preheat a gas grill to medium-high. To make the patties, combine the ground round, jalapeño, onion, cumin, chili powder, salt and pepper in a large bowl. Mix well then divide the mixture into 6 equal portions and form the portions into round patties. Once the grill reaches the desired heat, brush the grill rack evenly with olive oil then place the patties on the rack, cover, and cook about 7 minutes on each side until it reaches the desired doneness (Medium-well.) During the last minute or so of cooking time, lower the temperate of the grill to Medium-Low and place a slice of Monterey Jack cheese on each burger, place the buns on the grill cut side down and cover the grill. Continue cooking approximately 1 minute or until cheese has melted and buns are lightly toasted. To assemble the burgers, spread an even amount of the avocado dressing to the cut side of each bun bottom and top, sprinkle an even amount of chopped lettuce, about ½ cup to the bottom buns, place the patties on top of the lettuce (cheese side up), add a single layer of the chopped tomato on top of the cheese and to finish it off add a couple dashes of hot sauce to taste. Add the bread tops, slice burger in half and serve. Makes 6 burgers
