Ingredients

1 pound lean ground beef
4 Ounces Blue cheese — divided
1 pint Merlot wine
1/4 medium red onion — thinly sliced
4 tablespoons butter — chopped into pieces
4 thick slices of sourdough bread — trimmed
olive oil
1 medium peeled avocado — pitted and sliced
salt and pepper

 

Instructions

Heat the grill to medium hot. Divide the meat into fourths. Form the meat into cup shapes. Divide the cheese into fourths and put one quarter into each meat cup. Flatten the cups into patties. Salt and pepper both sides of the patties. Put the wine and onion into a small non-reactive saucepan and begin to reduce it over medium low heat. Reduce it until there is about one quarter of a cup left. Keep warm. Meanwhile grill the patties on the barbeque until the cheese is melted and the burgers are cooked to the desired doneness.Set the burgers aside. Brush each side of the bread slices with olive oil and brown them on both sides over the BBQ. Whisk the butter a piece at a time into the warm wine reduction. Adjust the seasoning. Place a piece of the toasted bread on each of four plates. Top each slice with a hamburger pattie. Spoon on some of the wine reduction. Top each pattie with 1/4 of the sliced avocado. Spoon on some more of the wine reduction.
