Bacon and Jalapeno-Pimento Cheese Burger

Ingredients:

Jalapeno-Pimento Cheese Mayonnaise:1 cup shredded pepper jack cheese
1 cup shredded cheddar cheese
1/4 cup pimentos,finely chopped
3 green onions,white parts finely chopped
1 clove garlic,pressed
1/2 t.smoked paprika
1/4 t.white pepper
1/2 cup mayonnaise,plus extra for spreading on rolls
1 jalapeno,seeded,finely chopped
burgers:1 3/4 lb.ground sirloin
1/2 lb.applewood smoked bacon,finely chopped in food processor
2 t.granulated garlic
3 T.grated onion
1/2 t.salt
1/2 t.black pepper
6 potato rolls,buttered,toasted
2 large tomatoes,sliced
3 cups arugula

Instructions:

1.In medium bowl combine all ingredients for Jalapeno Pimento-Cheese Mayonnaise.Mix well with a fork,adding more mayonnaise if too thick.Cover and refrigerate.
2.Preheat grill to medium-high.In large bowl combine all ingredients for the burgers,lightly mixing.Form into 6 patties,with slight indentation in middle.
3.Spray grill with non-stick cooking spray.Cook burgers 5 minutes and flip.When 1 minute before done(at 4 minutes)add large dollop of pimento cheese.Cook 1 minute more.Toast rolls on outside edge of grill.
4.To serve, spread mayonnaise on bottom roll,top with arugula,sliced tomato,burger and top roll.
