Bacon/Chicken Burger

1 lb. bacon
30 oz. ground chicken breast
1 tablespoon ground black pepper
barbecue sauce
1 tablespoon ancho chile powder
vegetable oil
prepared horseradish
thickly sliced white cheddar cheese
hamburger/sandwich buns Lg.
beefsteak tomato



1. Cook bacon in pan until crisp. 2. Break up bacon into small pieces. 3. Combine bacon pieces, ground chicken breast, 1 tablespoon ground black pepper, 3 tablespoons barbecue sauce, and 1 tablespoon ancho chile powder. 4. Divide chicken mixture into 6 even patties. 5. Put vegetable oil on grate to assist in preventing sticking. 6. Liberally season chicken patties with salt on both sides. 7. Cook chicken burgers over medium-high heat, approximately 9 minutes per side (until cooked through). 8. Combine 8 oz. mayonaise and 3 tablespoons prepared horseradish. 9. At end of cooking time, glaze top of chicken burgers with spread of barbecue sauce. 10. Place 1 slice of white cheddar cheese on top of burgers to melt. 11. Place buns on grill to lightly toast. 12. Close grill to help melt the cheese. 13. Remove burgers from grill and let stand. 14. Place chicken burger on bottom bun. 15. Cut and top burger with tomato slice. 16. Spread horseradish mayo on top bun. 17. Place top bun on top of burger. 18. Cut burger in half.
