Ballpark Nacho Burger

Ingredients

  • 1 1/2 PoundGround beef (80/20)
  • 6 Onion burger buns
  • 1/2 small Onion (finely diced)
  • 3 T Jalapenos (pickled, finely diced)
  • 2 T Jalapenos juice (from pickles
  • Jalapenos jar)
  • 1 1/2
  • Teaspoon Salt
  • 3/4 Teaspoon Pepper
  • 1/2 Teaspoon Onion Powder
  • 1/4 Teaspoon Garlic Salt
  • Jalapenos – for topping
  • Nacho sauce or this recipe:
  • 8 Ounces Sharp Cheddar cheese
  • 1/2 Cup Evaporated Milk
  • 1/4 Cup Jalapeno juice (from pickled Jalapeno jar)
  • 1/2 Teaspoon Onion powder
  • Tortilla strips
  • 4 Corn tortillas
  • Oil
  • Salt
  • Juice from 1/2 of a Lime

Instructions

  • Step one:
  • Add all the burger ingredients in a large bowl.
  • Mix thoroughly.
  • Form into six patties.
  • Grill to desired temp
  • Step two:
  • While burgers are grilling – Shred cheese and add to a sauce pan. Begin to melt on low, stirring frequently.
  • Add Evap. Milk and mix thoroughly. Add remaining ingredients. Set aside
  • Step three:
  • Heat oil. Slice tortillas into thin strips. Fry a small amount of strips at a time.
  • After each fry, sprinkle with salt. After all strips are fried, squeeze lime over all of the strips.
  • Build your burger: Bun (quickly grill if desired), Burger, Nacho cheese sauce, tortillas strips, Jalapenos.
  • Serve with remaining tortilla strips on the side.
