Baltimore Barbecue Burgers

1/8 cup raw sugar
1 1/2 tablespoons Old Bay seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/4 teaspoon ground chipotle powder
1/4 teaspoon ground black pepper
3/4 cup light Mayonnaise
1/2 teaspoon fresh grated ginger from jar
2 pounds fresh ground chuck
pure olive oil nonstick-spray
6 large Kaiser buns with poppy seeds
6 Boston lettuce leaves, washed & dried
1 small Vidalia or other sweet onion, thinly sliced
1 large beefsteak tomato sliced in six even slices



In a small mixing bowl combine raw sugar,Old Bay, smoked paprika, salt, ground chipotle, and black pepper with a whisk. Measure 1 teaspoon of the spice mixture into another small bowl with the mayo and fresh ginger -stir well and place in fridge to chill. Combine 1/2 the remaining spice blend with the ground chuck and mix gently with hands. Form the meat into six burgers. Sprinkle the remaining spice blend evenly over both sides of the burgers. Set the spiced burgers aside to rest while the grill preheats. Lightly spray the clean grates of a gas grill and preheat to medium heat. Grill the burgers for about 15 minutes total, flipping just once halfway through till meat thermometer measures 145 degrees (or higher if guests prefer) Lightly spray the sliced buns with olive oil and grill briefly on the top rack till golden. Spread the spiced mayo evenly among the buns, on both halves. Place burger on bottom, add lettuce leaf, 3 thinly sliced rings of sweet onion, and a slice of tomato, and top with bun. Repeat for other five and serve immediately.
