Bama Bacon Burger with Roll Tide Relish

Ingredients

1 Large Red Onion – diced
1 Red Bell Pepper – diced
1 Tomato – seeded and diced
Olive Oil Sage –
chopped basil – chopped
whole salt
pepper
cavender's crystal hot sauce
onion rolls 
Mayonaisse
Dijon Mustard
1 pound ground beef 80/20
5 slices of bacon
3 slices of baby swiss cheese

 

Instructions

Prepare the relish by combining, in a large bowl, the diced tomato and red bell pepper with half of the diced red onion, sage, basil, salt, pepper, cavender's, and 4 shakes of crystal hot sauce. Cover with olive oil, stir and set aside. Slice the bacon into 1/4" peices and sautee until 3/4 done. Remove the bacon and allow it to cool. Spread bacon drippings on the insides of the buns. Add cooled bacon and the remaining drippings to the ground beef, forming 3 patties (The drippings add flavor and act as a bonding agent – much like an egg, the bacon adds bacon). Coat patties liberally with salt, pepper, and cavender's. Grill burgers 4 minutes per side, or until medium rare, adding 1 slice of baby swiss cheese per burger, just before the end of cooking. Heat the onion rolls on the grill while cooking the burgers. Coat the top roll with Duke's mayonaisse and the bottom roll with dijon mustard. Place burger on the bottom roll, cover with relish, top with basil leaves, add the top roll and enjoy the incredible 'Bama Bacon Burger with Roll Tide Relish'.
