Ingredients

One medium size onion, finely chopped (any will work, I prefer sweet onions)
One medium size green or red pepper, finely chopped (red peppers adds some nice color)
One large clove garlic, minced
One tablespoon black pepper
Twelve ounces ground sirloin
Six ounces ground pork sausage
Six ounces ground venison
One tablespoon Worcestershire sauce
One ounce virgin olive oil, for brushing the grill rack
Six slices American cheese
Six large whole-wheat burger buns
One large Beefeater tomato cut into slices
Hamburger
pickles
Ketchup
Mustard

 

Instructions

Start a hot fire for direct cooking in a charcoal grill, or preheat a gas grill to medium-high. If using charcoal, the coals should be placed so that they are not under the entire rack, creating a border area of indirect heat. If using a gas grill, with two cooking zones only start one. When the grill is hot, clean it with a wire brush. While the grill is heating up begin the burger preparation. Combine the onions, peppers, minced garlic, black pepper, ground sirloin, pork sausage, ground venison and Worcestershire sauce. It is easiest to use clean hands for this task but please be careful not to over do it. You do not wish to ruin texture of the meat or compact it. Divide the mixture into 6 equal portions and form patties to fit the buns. Loosely wrap the patties in plastic wrap and set aside in a cool location until ready to grill. Once the grill is hot, brush the grill rack with the virgin olive oil. Place the patties on the rack and cover the grill. Cook the patties, turning only once. This is to keep the burgers from falling apart due to the onions and peppers. Cook until done to preference, about 7 minutes on each side for medium. Move the patties from the direct heat and placed a cheese slice on each patty. After a minute or so the cheese should have melted slightly. Remove from grill. To assemble the burgers, open up the buns then place a patty, a tomato slice and pickle. Season the burgers with ketchup and mustard to taste. Makes 6 burgers
