BAVARIAN BRATWURST BABY BEEF BURGERS On PRETZEL ROLLS
We took a trip to Germany this summer and the food was delicious. I combined all of those wonderful memories into my own Baby Beef Burger.Just Wunderbar!
Ingredients:
Bavarian Honey Mustard Sauce:
1/4 cup delicatessen style mustard
2 Tablespoons honey
1/4 cup mayonnaise
German Style Pickled Slaw
2 cups fine shredded red cabbage
1/4 cup chopped zesty dill pickles
1/8 cup minced chives
1 Tablespoon honey mustard sauce (prepared above)
1 Tablespoon zesty pickle juice
2 Tablespoons cooked bacon bits
1/2 teaspoon caraway seeds
1/8 teaspoon black pepper
Patties:
1/2 Tablespoon reduced salt Worcestershire sauce
1 egg
1/2 Tablespoon mustard sauce (prepared above)
1 garlic clove, minced
1/2 teaspoon salt
1/8 teaspoon black pepper
1/8 cup crushed garlic butter croutons
1 pound 90% ground sirloin beef
1/4 pound raw pork bratwurst sausage
2 Tablespoons vegetable oil for brushing grill rack
6 ounces buttterkase cheese, (1/2 ounce slices)
12 lightly salted pretzel dinner rolls, halved
Instructions:
Prepare Bavarian honey mustard sauce:
In a bowl, combine mustard, honey, and mayonnaise; set aside.
Prepare German Styled Pickled Slaw
In a large bowl, combine cabbage, chopped pickles, and chives. Stir mustard sauce and pickle juice; toss with coleslaw. Stir in bacon bits, caraway seeds, and black pepper. Set aside.
Prepare Patties:
Preheat a gas grill to medium or charcoal grill with cover to medium hot fire.
In a small bowl, combine Worcestershire sauce, egg, mustard sauce, minced garlic, salt, and black pepper. Stir in crushed croutons; set aside to soften croutons.
In a large bowl, break beef into pieces. Remove sausage from the casing, breaking pork into smaller pieces; toss with beef. Combine crouton mixture with meat until mixed; avoid compacting it. Form into 12 dinner roll size patties
Brush the grill rack with vegetable oil. Place the patties on the rack; cover; cook, turning once for about 4 minutes on each side or until tests done; place cheese slice on each patty the last minute of grilling, cover grill until cheese melts, about 1 to 2 minutes.
Place split dinner rolls to side of grill to toast the last 2 to 3 minutes before burgers are cooked.
To assemble the burgers: Spread the inside of toasted top and bottom rolls with honey mustard sauce, place coleslaw over honey mustard sauce on roll bottoms and tops; place cheese covered burger on roll bottom; cover with the dinner roll top and serve.
Makes: 12 baby burgers for 6 servings
