Beef Garlic Parmesan Burger

Ingredients

  • For patties:
  • 6 cloves Garlic
  • 6 tablespoons Olive oil
  • 9 tablespoons Panko breadcrumbs
  • 9 tablespoons Grated parmesan cheese
  • 2 lb. Lean ground beef
  • 1 teaspoon Black pepper
  • 1 teaspoon Salt
  • For salad:
  • 3/4 Cup Chopped fresh parsley
  • 1 teaspoon Olive oil
  • 1 teaspoon Lemon juice
  • 1/4 teaspoon Garlic salt
  • 1/4 teaspoon Black pepper
  • Others:
  • 2 tablespoons Olive oil for brushing the grill rack
  • 6 slices Low-moisture part-skim mozzarella cheese
  • 6 tablespoons Unsalted butter, softened
  • 6 Brioche buns, split
  • 6 Pitted large black olives
  • 3/4 Cup Store bought sun dried tomato pesto

Instructions

  • 1. Turn the gas grill to medium.
  • 2. Peel and grate garlic and put into a large shallow plate with 6 tablespoons olive oil and mix to combine. In another shallow plate, put panko and parmesan cheese. Mix to combine.
  • 3. Make patties. In a large bowl, put ground beef, 1 teaspoon black pepper and 1 teaspoon salt and mix to combine. Divide the mixture into six and shape each into a patty which is a little bit bigger than the brioche. Place patties onto the garlic oil plate and let sit for 5 minutes turning once halfway through.
  • 4. After 5 minutes, transfer the patties to the panko mixture plate and coat both sides of patties with panko mixture.
  • 5. Brush the hot rack of the grill with 2 tablespoons olive oil. Place patties on the grill rack. Cook patties until golden brown. Turn the patties. About 50-60 seconds before the second sides are grilled, put the cheese on each patty and keep grilling until cheese melt and patties are done or your desired doneness. Take the patties out and place on another large plate. Cover with aluminum foil loosely to keep them warm.
  • 6. Spread butter on cut sides of bottom and top of brioche buns and put the buns, cut sides down, on the outer edges of the grill rack. Toast buns until the cut sides are lightly browned or your desired doneness.
  • 7. Make salad. In another bowl, whisk together 1 teaspoon olive oil, lemon juice, garlic salt and 1/4 teaspoon black pepper. Add parsley and mix to combine.
  • 8. Chop black olives.
  • 9. Built burgers. On the bottom of the bun, place patty, spread 1/6 of sun dried tomato pesto, put 1/6 of black olives, 1/6 of salad and top of the bun, cut side down, to cover. Press the top gently. Repeat this with the rest of buns, patties, sun dried tomato pesto, olives and salad.
