Beet Burger With Turmeric Aioli
Ingredients
- 485g beet juice (about 6 regular small red beets), reduce by 1/2
- 300g beet pulp
- 500g pickled corn
- 518g cooked pearl barley
- 205g red onion, minced
- 19g garlic, minced
- 165g potato starch
- 300g of tvp
- 9g smoked paprika
- Salt to taste
Instructions
- Method:
- Juice beets and reserve the pulp. Reduce beet juice by 1/2. Mix all ingredients together and add potato starch until desired consistency is reached. Build into 7Ounces patties.
- Turmeric Aioli (Makes about 1 QT)
- 140g egg yolks
- 50g turmeric, peeled & minced
- 65g lemon juice
- 12g garlic
- 4g cayenne
- Salt to taste
- 520g blended oil
- Method:
- Combine yolks, turmeric, lemon juice, garlic, cayenne in roboku, slowly add in oil to finish. Season to taste.
