Beet Burger With Turmeric Aioli


  • 485g beet juice (about 6 regular small red beets), reduce by 1/2
  • 300g beet pulp
  • 500g pickled corn
  • 518g cooked pearl barley
  • 205g red onion, minced
  • 19g garlic, minced
  • 165g potato starch
  • 300g of tvp
  • 9g smoked paprika
  • Salt to taste


  • Method:
  • Juice beets and reserve the pulp. Reduce beet juice by 1/2. Mix all ingredients together and add potato starch until desired consistency is reached. Build into 7Ounces patties.
  • Turmeric Aioli (Makes about 1 QT)
  • 140g egg yolks
  • 50g turmeric, peeled & minced
  • 65g lemon juice
  • 12g garlic
  • 4g cayenne
  • Salt to taste
  • 520g blended oil
  • Method:
  • Combine yolks, turmeric, lemon juice, garlic, cayenne in roboku, slowly add in oil to finish. Season to taste.
