Best Roasted Garlic Burger

Ingredients

1 lb. chopped prime beef
1 head roasted garlic (recipe follows)
1 large onion, chopped
3-4 Tbs. seasoned bread crumbs
1 Tbs. unsalted Butter
3 Tbs. Extra-virgin olive oil (seperated)
2 Tbs. Sutter Home Red Wine of your choice
1 tsp. Mellow barley MISO paste (fermented soy beans)
1 egg, whisked
Kosher Salt
Freshly Ground Black Pepper

 

Instructions

Preheat oven to 450 degrees. Cut the top of the garlic head, sprinkle with 1 Tbs. olive oil and a pinch of kosher salt. Wrap in foil, and bake for approx. 45 minutes. Remove from oven, set aside and let cool. In a medium size sautee pan, add butter, and 1 Tbs, olive oil, and turn on to medium heat. Add chopped onion, and a large pinch of kosher salt. Stir, and cook until carmelized, approx. 15 minutes. Add red wine and cook for another 5 minutes. Take off heat and let cool. In a large bowl, add chopped meat, bread crumbs, egg, miso paste, 1 Tbs. olve oil, a pinch of salt, and a pinch of black pepper. Toss to combine. Remove cooled garlic from foil and "squeeze" out garlic cloves into burger mixture. Add carmelized onions. Mix well with a wooden spoon or hands. If mixture is too wet, add more breadcrumbs, 1 Tbs. at a time. If mixture is too dry, add water or wine, 1 Tbs. at a time. Form into patties and grill on medium-high heat, 3-5 minutes on each side.
