Big Island Burger with Hawiian Barbecue Sauce

Ingredients

Barbeque Sauce:
1/2 cup ketschup
1/4 cup brown sugar
1/2 teaspoon minced garlic
1 teaspoon soy sauce
1/4 cup crushed pineapple, drained
1/4 cup chopped red onions
1/4 teaspoon ground ginger
1/4 teaspoon red pepper flakes
1 teaspoon olive oil

Patties:
2 pounds ground chuck
2 teaspoons kosher salt
1 tablespoon Caribbean Jerk seasoning
1/2 teaspoon red pepper flakes
2 teaspoons minced garlic
3/4 cup chopped red onions
1/2 cup chopped green peppers
1/4 cup ketschup
1/4 cup of barbecue sauce
vegetable oil to brush grill rack
6 slices canadian bacon
6 slices swiss cheese
6 slices fresh pineapple
6 sesame seed buns,split

 

Instructions

Preheat grill to a medium-high heat. To prepare barbecue sauce: In a small ovenproof saucepan, on the top of grill rack,whisk together the ketschup,brown sugar,garlic,soy sauce,crushed pineapple,onion,ginger,pepper flakes and olive oil. Simmer over low heat for 10 minutes,stirring constantly. Set aside 1/4 cup to cool to add to meat mixture. Set aside 1/4 cup to add on top of buns later. Remaining sauce will be used to baste burgers. To prepare the patties: In a large bowl,crumble the ground chuck. Add salt,caribbean jerk,red pepper flakes,garlic,onions,green peppers,ketschup and 1/4 cup barbecue sauce. Mix well,handling the meat as little as possible. Divide the mixture into 6 equal portions and form the patties to fit the buns. Prior to placing the burgers on the grill,brush the rack with vegetable oil. Place patties on the grill rack,brush with bbq sauce,cover and cook. Cook 5-7 minutes on each side,turning only once. Internal temperature needs to reach 160 degrees. Baste with bbq sauce when turning. Place a slice of canadian bacon and a slice of cheese on patty the last minute of cooking. Cover to melt cheese. Remove to a platter. Place pineapple slices on grill,and turn to cook both sides,about 2-3 minutes total. Toast buns,open side down on outside of grill for 30 seconds. Remove. To assemble the burgers,place bottom of bun on a serving plate. Add the patty and grilled pineapple. Spread 1 tablespoon of the bbq sauce on top of bun and add to patty. Serve burger. Makes 6
