Big Island Chicken Burger

Reach for our Chardonnay when you’re in the mood for a rich and creamy wine that delights with the fruity flair of pear, apple, and peach.

Ingredients

1 pound ground chicken, (NOT from breast meat only)
1 can of spam
1/4 cup fresh,white bread crumbs
1 egg slightly beaten
1 tablespoon fresh, finely grated ginger root
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/2 teaspoon white pepper
vegetable oil for wipping down grill
Hoisen sauce to brush on patties
6 green bellpepper ring slices
6 pinapple rings
1 small red onion sliced alfalfa sprouts to top
6 kaiser rolls

 

Instructions

Light charcoal grill. Place spam in a food processer fitted with a blade. Pulse until just smooth. In a large mixing bowl, add the ground chicken,spam,bread crumbs,egg,ginger root,red pepper flakes,salt and pepper. With your hands, mix until well combined. Shape into 6 patties. When the coals are no longer flamming,just glowing, wipe grill down with some vegetable oil. Carefully place patties on grill and brush each with some of the hoisen sauce. To the side of patties, place green peppers, red onion slices, and pineapple rings. Grill peppers,onions,and pinapple about 2-3 minutes per side. Just enough to soften and get nice grill marks. Gently flip patties and brush with more hoisen sauce. Grill for 4-6 minutes more.When done, move both patties and peppers,onions,andpinapple to a plate to keep warm. Split open kaiser rolls and grill face down just a minute or two, until lightly toasted. Top each roll with a patty, 1 green pepper slice 1 pineapple slice, red onion slice and some of the alfalfa sprouts. Enjoy!
