bistro burger (stliton, cremini and caramelized onions)

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.


Caramelized onions
2 teaspoons of olive oil
2 Vidalia onions
1/2 teaspoon of salt
1/2 teaspoon of cracked pepper

Sauteed mushrooms
1 teaspoon of olive oil
3/4 cup sliced cremini mushrooms
2 tablespoons of dry red wine

1 1/2 pounds ground beef (80\20)
2 teaspoons Cavendars (all purpose Greek seasoning)
2 teaspoons of minced garlic vegetable oil
4ounces of stilton cheese
1 cup of shredded romaine lettuce
6 each crusty rolls

1. Slice 2 Vidalia onions, thin. Heat saute pan on low add 2 teaspoons of olive oil wait one minute then add sliced Vidalia onions, salt and cracked pepper. Cook on low heat for 20 minutes or until onions become soft and translucent, stirring occasionally, then increase heat to medium and cook until onions are golden, maybe another 20 or 30 minutes. When ready cover and set aside. 2. Prepare a medium-hot fire on a charcoal grill with a cover, or preheat a gas grill to medium-high. 3. Wash and pat dry mushrooms. Slice mushrooms. Heat saute pan to medium add 1 teaspoon of olive oil to pan when it is hot. Wait one minute then add sliced mushrooms, saute for 2 minutes then add salt and pepper and 2 tablespoons of dry red wine. Cook until liquid has reduced. Cover and set aside. Chiffonade cleaned romain lettuce. Weigh out 4 ounces of Stilton cheese. 4. Combine ground beef gently with Cavendars seasoning and garlic. Do not over mix. Patty into 6 equal burgers. Cover and set aside. 5. Brush the grill with vegetable oil. Place the patties on the rack, cover, and grill 4 minutes on each side for medium rare or 5 minutes on each side for medium. The last two minutes brush sliced crusty rolls with vegetable oil and place on the rack to lightly toast. 6. To assemble burgers distribute shredded romaine among the 6 toasted roll bottoms, then the burger, equal amounts of the Stilton, mushrooms, caramelized onions and top of the bun.
