Black and Blue Turkey Burgers with Fiesta Blue Cheese Sauce

Paired or alone, there's something magical about this creamy wine that nods to yummy peaches and sinful delights.

Ingredients:

1/2 cup Colavita Olive Oil for brushing grill

Fiesta Blue Cheese Sauce:
1 egg
1 tablespoon Tabasco Chipotle Pepper Sauce
1/4 cup Sutter Home Moscato Wine
1/4 cup sour cream
1 – 5 ounce package Treasure Cave Crumbled Blue Cheese
1 teaspoon ground coriander
1 teaspoon celery salt

Patties:
19.2 ounces ground turkey burger
1 teaspoon celery salt
1 egg
1- 5 ounce package Treasure Cave Crumbled Blue Cheese
1 cup black beans drained and rinsed
12 slices French bread (about one loaf minus the heels cut into 1/2 inch thick slices)

Instructions:

Preheat a gas grill to medium high heat and grease grill 5 minutes before ready to cook with most of Colavita Olive oil, saving some to brush bread with later.

To make the sauce, in a one quart saucepan combine egg, Chipotle Sauce, wine, sour cream, Blue Cheese, coriander, and celery salt and mix well, setting aside for later use.

Patties:
In a large bowl combine turkey burger, celery salt, egg, Blue Cheese, and beans, and mix well with hands handling as little as possible. Form into 6 patties and place on preheated grill. Cook covered on each side 4-6 minutes until done. While burgers cooking place sauce into saucepan on grill and cook sauce until almost reaches a boil, stirring occasionally. Remove and cover and set aside for later use. When burgers are almost done place brush bread with olive oil and place buns on grill for about 1-2 minutes or until lightly toasted. Place patties on bottom bun and spread one tablespoon Fiesta Blue Cheese Sauce evenly over each burger. Spoon any remaining sauce over top bun. Yields 6 servings.
