Black Garlic Parmesan And Onion Creme Brulee Burger

Ingredients

  • 6 Burger Patties
  • Six Brioche Buns
  • 6 Cups of arugula
  • 1 small red onion
  • 1 large red pepper
  • 4 buPounds of black garlic
  • 3 Cups of Parmesan Reggiano
  • 4 tablespoon of butter
  • 1 Cup of olive oil
  • 4 cloves of white garlic
  • 6 slices of Creme Harvarti Cheese
  • 1/2 Cup of heavy cream
  • 2 tablespoon of White Truffle Oil
  • 1 Cup of Mayo
  • 1 Cup of Sutter Home Chardonnay
  • 2 Teaspoon of salt
  • 1 1/2 tablespoon of black pepper
  • 1 1/2 tablespoon of garlic powder
  • 1 tablespoon of sugar

Instructions

  • Beef Patties
  • Season Beef Patties with a mixture of 1 tablespoon of Salt, 1/2 tablespoon of Black Pepper and 1 Tablespoon of Garlic Powder sprinkle each patty with the seasoning and grill on gas or charcoal grill.
  • Use indirect heat so burgers don’t burn.
  • Grill for 2-3 minutes on each side and repeat turning until desired temperature. Well done is the desired temperature of this recipe, so continuous turning burger for 10-15 minutes.
  • Remove patties from grill and set aside.
  • Brioche Bun
  • Melt 2 tablespoons of non-salted butter.
  • Brush each bun, top and bottom, with butter.
  • Place buns on the grill (buttered side down).
  • Grill each bun for 20 secs.
  • Onion CrŹme
  • Cut 1 red onion in the very thin slices
  • Soak in 3/4 Cup of Sutter Home Chardonnay for 15 minute or while burgers and buns are being grilled
  • Remove onions from soak and place them on grill pan.
  • Sautee onions by adding 2 tablespoon of non-salted butter and 1/4 Cup of Sutter Home Chardonnay and 1/2 Cup of heavy cream. Sautee onions for 5 minutes. Lifting Grill pan when necessary to not over cook the onions.
  • Set onions aside.
  • Black Garlic Parmesan
  • Remove cloves from 4 black garlic buPounds and place them in a food processor along with 3 Cups of graded Parmesan Reggiano cheese and blend for 10 to 15 seconds. Set mixture aside
  • Brulee` topping
  • 1/2 tablespoon Salt
  • 1/2 tablespoon Garlic Powder
  • 1 tablespoon Sugar
  • Scorch Red Pepper and White Truffle Garlic Mayo
  • Coat 4 white garlic cloves and 1/2 sliced red pepper with 1 tablespoon of white truffle oil.
  • Grill in grill pan for 15 minutes on low heat.
  • Remove the garlic and rep peppers and place in food processor along with 1 Cup of Mayo, 1/2
  • tablespoon of White Truffle Oil, 1 Teaspoons of salt, and 1 teaspoon of black pepper.
  • Mix and set aside.
  • Wash arugula set aside.
  • Burger Assembly
  • Place bottom bun on plate or serving dish.
  • Add a tablespoon of the Scorched Red Pepper and White Truffle Garlic Mayo to the bottom bun.
  • Next place 1/2 Cup of arugula and then the burger patty.
  • On top of the burger patty place the onion crŹme mixture and then one slice of Harvarti Cheese and then the Black Garlic Parmesan mixture sprinkle with the sugar, salt, garlic brulee` topping mix and then use Culinary torch or brulee` the toppings. Place bun top next to assembled burger.
  • Repeat for all six burgers.
