Blacken & Blue Burger

Ingredients

Blackening spices:
4 ts Thyme
4 ts Oregano
4 ts Mustard powder
12 ts Salt
4 ts Garlic powder
4 ts Black pepper
2 ts White pepper
4 ts Onion powder
2 ts Cumin powder
1 ts Cayenne pepper
4 ts Sweet paprika
Patties:
2 lbs ground chuck
1 teaspoon freshly ground black pepper
2 teaspoons kosher salt
1/2 teaspoon seasoned salt
2 cloves pressed garlic
1 tablespoon Extra Virgin Olive Oil
8oz crumble blue cheese
Grilled Onions:
2 large Vidalia onions
1 tablespoons Extra Virgin Olive Oil
1/2 teaspoon freshly ground black pepper
1 tablespoon salted butter
1 teaspoon brown sugar

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To prepare the blacken seasoning, Pour all spices in lidded bowl, place lid on and shake until well mixed. Now prepare the patties. Take the beef combine all the dry spices. Next press and mince the 2 cloves of garlic. Pour in tablespoon of extra virgin olive oil. Mix all of the above ingredients in the beef. Once all ingredients have been mixed well, take the beef mixture and divide it into 8 seperate patties. Once the patties are formed press 1 oz of blue chesse into the center of each patty. Once patties are made take the blacken seasoning. Apply a light coating to each side of the patties. If more spice is desired place extra seasoning on the burgers. Cover with platic wrap and start preparing the onions. To prepare the grilled onions, Take a large piece of foil, and fold up the side to make a shallow bowl. Cut onions into thin slices. Place onions in center of the foil. Now pour olive oil, black peper and brown sugar in a small bowl. Wisk lightly. Pour mixture over onions and top with butter. Seal onions in foil and place on grill on the coolest spot on the grill so they may cook slowly. Every once in a while simply shake the foil bag to distribute mixture over the onions. After the onions have been cooking for 5 minutes,start cooking the patties. Brush the grill rack with oil. Place the patties on the rack and cover the grill. Cook the patties, turning only once, until done to preference, 5 to 6 minutes on each side for medium. To assemble the burgers, Simply place cooked burger on the bottom bun and place the cooked onions on the top of burger. Then place the top bun on. Makes 8 1/4lb burgers.
