Blackened Blue Burger

Ingredients

1-1/2 pounds ground beef (85%)
6 teaspoons Cabernet wine
7 teaspoons white onion chopped
6 teaspoons finely chopped garlic approx. 4 cloves
1/4 cup hot peppers in oil chopped (I used \\
3 tablespoons fresh chopped parsley
1/2 teaspoon salt
1/2 teaspoon black pepper
Olive oil spray for grill or 2 tablespoons of olive oil to brush on grill
2 teaspoons salt
1 teaspoon garlic power
1/2 teaspoon cayenne pepper
1 teaspoon white pepper
1 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 Tablespoon paprika
1/4 cup sugar
1/2 teaspoon cornstarch
1/4 cup water
1/4 cup blueberries
6 slices swiss cheese
6 hamburger buns
6 slices of tomato
6 small lettuce leaves

 

Instructions

Place beef in a large bowl. Add wine, onion, garlic, hot peppers, parsley, salt, pepper. Mix well and shape into 6 patties. Set aside.

Spray olive oil on grill or brush grill with olive oil. Light grill on medium heat.

Prepare blackened seasoning: Place in a small bowl salt, garlic powder, onion salt, cayenne pepper, white pepper, black pepper, thyme, oregano, paprika. Mix and set aside. This can be prepared up to a month ahead and stored in a jar at room temperature.

Prepare blueberry sauce:
Place sugar, cornstarch, and water in a fireproof pan. Place on grill (medium heat) grill and heat to a slow boil – approx. 3-5 min.. Do not leave pan – if it boils too fast be prepared to remove from grill until it settles down. Add blueberries and heat until they pop. Approx. 3-4 minutes. Remove from heat and cool by placing pan in a bowl of ice. This can be prepared up to one week ahead of time and stored in the refrigerator.

Brush 2 teaspoons of blueberry sauce on the top of each burger. Sprinkle 1/2 teaspoon of blackened seasoning on top of burgers. Place burgers on medium grill with the blueberry and blackened seasoning side down. Brush top of burger with 2 teaspoons blueberry sauce and 1/2 teaspoon of blackened seasoning. Grill 5 to 7 minutes for medium turning burgers once. Close grill for a minute or two in between the 5 and 7 minutes. Place swiss cheese on top of burgers. Close grill and let cheese melt. Place burger on buns – add tomato and lettuce. Enjoy.
