Blazin’ the Dusty Trail Burger

Ingredients

2 pounds ground chuck
2 teaspoons kosher salt
1 teaspoon black pepper
2 tablespoons Steak Seasoning
1 package Onion soup mix
2 tablespoons chilli powder
1/2 cup chopped red onions
2 tablespoons chopped parsley
1 diced jalapeno pepper
1/2 cup Chilli Sauce
olive oil to brush grill
6 slices pepper jack cheese
6 slices sharp cheddar cheese
6 sesame seed buns,split
6 lettuce leaves
6 thin slices red onion
6 slices tomato
1/2 cup chipotle mayonnaise

 

Instructions

Preheat grill to a medium-high heat. In a large bowl, crumble the ground chuck. Add the salt, pepper, steak seasoning, onion soup mix, chilli powder, red onions, parsley, jalapeno pepper, and chilli sauce. Mix well, handling the meat as little as possible. Divide the mixture into 6 equal portions and form the patties to fit the buns. When grill is ready, brush the grill rack with olive oil. Place the patties on the grill rack,cover and cook turning once. Cook 5-7 minutes on each side, until internal temp reaches 160 degrees. Add a slice of pepper jack and cheddar cheese the last minute of cooking. Cover to melt cheese. Remove patties to a platter. Toast buns, open side down on outside of grill for 30 seconds. To assemble the burgers, place bottom of bun on a serving plate. Add lettuce, patty, onion slice, and tomato. Spread chipotle mayonnaise on bun top and place on burger. Serve the burger. Makes 6.
