Blu Truffle Sirloin Burger

3 pounds freshly ground sirloin
1/2 cup Sutter Home Merlot
3/4 cup Roquefort cheese crumbles
1/2 cup plain flat bread, ground into fine crumbs
1/4 cup truffle mayonnaise
1 truffle, shaved
1 tsp freshly ground white pepper
1/2 tsp freshly ground sea salt
4 whole wheat hamburger buns
olive oil for grill
Truffle Mayonnaise:
1/2 cup white truffle oil
1/2 cup hazelnut oil
1/4 cup Roquefort cheese
1 egg yolk
2 tsp shaved truffle
2 tsp red wine vinegar



Mix all ingredients and let rest for 30 minutes then mold into six patties. Heat grill, spray with olive oil and grill burgers until internal temp is at least 160 degrees F. Serve Blu Truffle Sirloin Burgers with Truffle Mayonnaise spread on both sides of buns.
