Blue Cab Bacon Burgers With Wined And Brined Mushrooms

Ingredients

  • Wined and Brined Mushrooms:
  • 2/3 Cup Sutter Home Cabernet Sauvignon
  • 1/3 Cup olive oil
  • 1/3 Cup red wine vinegar
  • 1 1/2 Teaspoons salt
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon black pepper
  • 12 Ounces thinly sliced white mushroom
  • 1 tablespoon vegetable oil for grill grates
  • Patties:
  • 2 Pounds. ground chuck
  • 1/4 Cup Sutter Home Cabernet Sauvignon
  • 2 Teaspoons Worcestershire sauce
  • 4 Ounces crumbled blue cheese
  • 1 teaspoon seasoned salt
  • Sweet Relish Spread:
  • 1/2 Cup mayonnaise
  • 2 Teaspoons ketchup
  • 2 Teaspoons sweet pickle relish
  • 1 teaspoon spicy brown mustard
  • 2 Teaspoons red wine vinegar
  • Other:
  • 6 slices white American cheese
  • 6 white hamburger buns, split
  • 6 leaves curly red lettuce, slightly large than buns
  • 9 slices hickory smoked bacon, halved and cooked crisp
  • 6 large thin tomato slices

Instructions

  • For Wined and Brined Mushrooms, in a 2-quart pot, bring Cabernet Sauvignon, olive oil, vinegar, salt, sugar, garlic, and pepper to a boil over medium high heat.
  • Add mushrooms.
  • Return to a boil then reduce heat to low. Simmer for 5 minutes, stirring often.
  • Remove from heat and transfer to a bowl.
  • Chill for 15 minutes.
  • Meanwhile, heat a gas or charcoal grill to medium high heat.
  • Oil grill grates. For patties, place ground chuck, Cabernet Sauvignon, Worcestershire sauce, blue cheese, and seasoned salt in a large bowl. Combine with clean hands just until evenly mixed.
  • Shape in six patties slightly larger than buns.
  • Grill for about 4 minutes per side for medium or to desired doneness.
  • Stir all Sweet Relish Spread ingredients together in a small bowl.
  • Set aside. During last minute of grilling time, place a slice of cheese on each patty.
  • Place buns, split side down, on edge to grill to toast lightly. Drain mushrooms.
  • To assemble, spread toasted sides of buns with Sweet Relish Spread.
  • Add a lettuce leaf then a cheese-topped patty to each bun bottom.
  • Add about 1/4 Cup of mushrooms then three half-slices of bacon onto cheese on each patty. Add a tomato slice then a bun top to each. Serves 6.
