blue cheese buffalo bacon burgers (BBB burgers)

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

8 slices of thick hickory smoked bacon
1 pound ground chuck
1 tsp. salt
1 tsp. pepper
grilling spray
6 oz. blue cheese crumbled
1/2 cup buffalo wing sauce
4 kaiser rolls
4 tbsp. melted butter

 

Instructions

Cook the bacon in a skillet until crispy. Drain the bacon on paper towels. Mix the ground chuck with the salt and pepper and form into 4 patties, handling them as little as possible. Let them rest for 15-20 minutes at room temp. until fire is ready. Spray the grill with grilling spray. Prepare a medium-hot fire in a charcoal grill with cover. When the coals are white hot and the grill is ready, place the patties on the rack and cover them. Let them cook, turning once after about 5-6 minutes. After they have been flipped, sprinkle 1.5 oz. (or enough to cover the burger top) of blue cheese on the burger and cover again. Let them cook about 5 minutes on this side. Spread the rolls with melted butter during the last minute or two of cooking. Place them around the edge of the grill until lightly toasted. Take the rolls and burgers off the grill. Cover patties with foil until ready to assemble. Brush the top and bottom of each roll with 1 tbsp. of buffalo sauce ( 2 tbsp. total for each whole bun). Place the patty on the bottom roll (cheese side up). Place 2 slices of bacon on top of the patty and place the other bun half on top. Serve immediately and please enjoy!
