Bok Choy Wasabi Burgers

Pairs well with:

Chenin Blanc

This wine is bursting with crisp, refreshing fruit flavors like apple, pear, and melon, making you want to swing your legs off a dock at sunset.

Ingredients:

1/4 c. mayonnaise
2 Tbsp. wasabi paste
2 tsp. toasted sesame oil

1-1/2 lb. ground beef
1/4 cup shoyu (or soy sauce)
2 tsp. fresh ground pepper
1/2 cup toasted whole sesame seeds

6-12 (depending on size) whole baby bok choy
2 Tbsp. shoyu (or soy sauce)
2 tsp. fresh ground pepper
Olive oil for grill
6 thin slices prosciutto

6 sesame hamburger buns, sliced in half lengthwise

Instructions:

In a small bowl mix together mayonnaise, wasabi paste and sesame oil. Refrigerate until ready to serve.

Pour sesame seeds into a shallow bowl. In a large bowl combine beef with 1/4 c. shoyu and pepper. Form into 6 patties, and roll each in sesame seeds, pressing well to coat both sides of all burgers.

Sprinkle bok choy with 2 Tbsp. shoyu and fresh ground pepper.

Prepare hot grill with oil. Grill burgers until done to your taste (approx. 5 minutes on each side for medium). Grill bok choy until slightly blackened but still crunchy, prosciutto slices until crispy. Lightly toast cut side of rolls. Remove all from heat.

To serve, spread each side of bread with wasabe-mayo, then layer each bottom of roll with equal amounts of bok choy, one burger, and prosciutto (in that order) and remaining top of bun. Serve immediately.
