Bolognese Burgers

Ingredients:

Patties:
1tbsp olive oil
1 small Onion finely minced
1 med Carrot shredded (on fine side of box grater)
2 cloves Garlic (minced using micro-plane grater)
2 Tbsp Tomato paste
1 Tbsp Italian Seasoning
2 pounds Ground Beef(80/20 or 70/30)
2 Tbsp Worcestershire Sauce
2 Tbsp Red Wine
1 Tsp fresh coarse ground pepper
1 Tsp kosher salt
¼ cup Parmesan cheese

Basil Mayo:
1 cup Mayonnaise
1 bunch fresh Basil

Vegetable oil for grill
6 Ciabatta rolls sliced lengthwise
6 slices Fresh Mozzarella Cheese
6 slices Large Beefsteak Tomato (preferably Heirloom variety)
2 cups Arugula

Instructions:

Preheat Gas grill to Medium

For the patties: Preheat a Medium size skillet on grill(Be careful, the handle will get hot). Add olive oil. Saute onion and carrot in skillet for 4-5 minutes, then add garlic for 1 minute. Next add Tomato paste and Italian seasoning for 1-2 minutes. Transfer mixture to heatproof bowl and cool in fridge. When the onion mixture is cool add to mixing bowl with ground beef. Additionally add Worcestershire Sauce, Red wine, pepper, salt, and Parmesan cheese. Mix with your hands (I wear gloves to prevent contamination) just until combined. Do not over mix. Divide mixture into 6 even sections and then gently form into patties. Once patties are formed, put mixture in fridge until 40 minutes before serve time.

Turn grill up to Medium/High

For the Basil Mayo: Put Mayo and Basil in food processor and process until blended. Reserve in the fridge until just before service.

Brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook for 4 to 5 minutes per side, until the desired doneness is reached. With approximately 1 minute left in cooking time place cheese on top of burgers cover grill to melt cheese. During the last few minutes of cooking, place the Ciabatta Rolls cut sides down on the outer edges of the rack to toast lightly. Watch rolls carefully, they burn quickly. Turn rolls once to toast both sides.

To assemble the Burgers: Spread Basil Mayo on cut side of top half of the roll, To bottom half of roll add burger with cheese top, 1 slice tomato, and small handful of arugula. Place top of bun on the burger and serve
