Brazilian Turkey Burgers w/ Home Made Pineapple-Chipotle Mayo

Where I’m from, Spring is all about grilling! So I wanted to put a fresh and healthy spin on the traditional burger for dinner parties with my friends at home. This is the best of both worlds – it tastes great and has lower fat than a traditional burger.

Ingredients:

For Home Made Chipotle Mayonnaise:

2 eggs

2 tablespoons of pineapple juice

1 cup of extra light olive oil

3 chipotles

1 half of a lime (to squeeze out the juice)

1 tablespoon of Patron Tequila

1 teaspoon of salt

1 half teaspoon of black pepper

For Brazilian Turkey Burgers:

1 and a half pounds of ground turkey

1 Fuji apple (chopped & peeled)

1 sweet onion (chopped)

1 teaspoon of Paul Prudhomme Blackened Steak Magic seasoning

1 teaspoon of cayenne pepper

3 tablespoons of Kikkoman’s teriyaki sauce

1 half cup of breadcrumbs

1 egg

6 burger buns

1 can of pineapple slices (drained)

1 tomato (sliced)

Instructions:

For Home Made Chipotle Mayonnaise:

1. Combine 2 eggs, 2 tablespoons of pineapple juice, the juice from 1 half of a lime, 1 tablespoon of tequila, 1 teaspoon of salt, and 1 half teaspoon of pepper into a mixing bowl . Stir with a whisk until smooth.

2. Pour 1 cup of extra light olive oil into the mixture a few drops at a time while stirring. Once all of the olive oil has been stirred in, pour the mixture into a blender/food processor with 3 chipotles. Now you have home made Pineapple Chipotle Mayonnaise!

For Brazilian Turkey Burgers:

1. Preheat grill (medium to high heat).

2. In a mixing bowl, stir together 1 and a half pounds of ground turkey,1 chopped and peeled Fuji apple, 1 chopped sweet onion, 1 teaspoon of cayenne pepper, 1 teaspoon of Paul Prudhomme Blackened Steak seasoning, 3 tablespoons of teriyaki sauce, 1 half cup of breadcrumbs, and 1 egg. Once mixture is evenly combined, form six patties from it.

3. Spread oil on your grill’s grate. Grill the burgers for 8-10 minutes, or until well done. Toast burger buns on grill. Place a pineapple slice and tomato slice on each burger and serve on toasted buns after spreading your home made chipotle mayonnaise on the buns.
