Bubba’s Blazin Black and Blue Burger

Pairs well with:

White Zinfandel

With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.


3 lbs of ground chuck
2 med-lg eggs
1\2 cup Italian Bread Crumbs
2 med Jalapeño Peppers
2 med cloves of Garlic
1-2 Basil leafs for each burger
1.4 oz Crumbled Blue Cheese
1/3 container of Spicy Seasoning
12 thin slices of imported Swiss cheese



Start by combining your meat, eggs, and bread crumbs in a large mixing bowl, a kitchen aid works well but your hands will be fine. Once it is mixed well let it sit. In a small pan, coat with Extra Virgin Olive oil, enough to cover the bottom. Heat your grill to 200 degrees. While your grill is heating up, finely chop your garlic, jalapeños, and the basil. Add to the pan and sauté for 3-4 mins. Remove from grill, heat the grill to 400 degrees and drain excess oil from the veggies. Combine with meat. The last ingredient to be added is your Blue Cheese, use about 2/3 the container, leave enough to top your burgers. I like big burgers so make them about a half pound each. Rub your seasoning into both sides of the burgers, this will give it a little more flavor and will give these burgers their blackened exterior. Once your grill reaches 400 degrees, throw em' on. Let them cook for about 4 minutes each side or until desired doneness. Don't worry if your grill flares up, this will help the blackening and will lock the juices in your burger. Place the remainder of the blue cheese on top of the burgers and 2 slices of Swiss cheese. Turn the grill off and close the lid long enough for the cheese to melt. Place on a sour dough roll or a roll of your choice and enjoy!
