Buddy’s Swamp Burgers

Pairs well with:

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients:

3 lbs total of ground beef. 75% 80/20 beef, 25% 93/7 beef
1 tablespoon black pepper
1 tablespoon salt
1 large red onion finely chopped
1/2 head of parsley loosely chopped
2 tablespoons chopped garlic

Swamp Sauce- to be mixed in to beef

1/4 cup sugar
2 cups water
1 can tomato paste
1/4 cup vinegar
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon turmeric
1 teaspoon tamarind
1/2 teaspoon liquid smoke
1 teaspoon nutmeg
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon allspice

6 slices white cheddar cheese

Relish –
4 haas avocados
1 jalapeno
1 large mango
2 limes
1 orange
1 pinch of salt
1 teaspoon of black pepper

6 french buns no seeds

Instructions:

In large mixing bowl add beef, 1 tablespoon black pepper
1 tablespoon salt
1 large red onion finely chopped
1/2 head of parsley loosely chopped
2 tablespoons chopped garlic
mix thoroughly

In a separate bowl add 1/4 cup sugar
2 cups water
1 can tomato paste
1/4 cup vinegar
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon turmeric
1 teaspoon tamarind
1/2 teaspoon liquid smoke
1 teaspoon nutmeg
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon allspice

whisk together. Add sauce into bowl with ground beef and mix through
Form 6 approximate 8 oz patties.

In a food processor, add 4 haas avocados
1 jalapeno
1 large mango
2 limes
1 orange
1 pinch of salt
1 teaspoon of black pepper
blend until ingredients are broken down into a well blended lumpy paste.

Grill each patty for 5 – 6 min on each side, only flipping once depending on temperature of grill. 5-6 min usually makes a medium burger

Add each slice of cheese to the top of the burger 45 seconds before they are to be taken off the flame.

Place each burger on its bun and spoon a generous amount of the relish on top of each burger. Place the top of the bun on each burger, add toothpicks to each side and cut in half
