Buffalo Buffalo Burger

Ingredients

Blue Cheese Dressing:
-4 oz blue cheese crumbles
-3/4 cup sour cream
Patties:
-1/3 cup Hot Sauce
-1/8 cup Worcestershire Sauce
-2 tsp salt
-1 tsp fresh ground black pepper
-1/2 tsp celery salt
-1 tsp ground cayenne pepper
-2 large cloves garlic minced
-2 lb ground buffalo
-6 whole wheat kaiser rolls
-6 tomato slices

 

Instructions

Prepare a hot fire in a charcoal grill, or preheat a gas grill to high To make blue cheese dressing, in a medium bowl, fold blue cheese into sour cream. Set aside. To make the patties, in a medium bowl whisk red hot sauce, worcestershire sauce, salt, black pepper, celery salt, cayenne pepper and minced garlic together. Place the buffalo in a large bowl. Handling the meat as little as possible blend the wet ingredients into the ground buffalo by hand. Divide the mixture into 6 equal portions and form into patties to fit the rolls. Place patties on the rack and grill until very brown and carmelized on the bottom, 3-4 minutes. Turn patties and continue to grill until done to desired preference, about 4 minutes longer for medium. Remove patties from grill. Place split rolls, cut side down on the grill briefly until lightly toasted. To assemble the burgers place buffalo patties on bottom rolls, spread a generous amount of the blue cheese on the patties, top each with a tomato slice, add roll tops and serve.
