Buffalo Chicken Pizza Burger
Three of my favorite happy hour foods are buffalo wings, burgers and buffalo chicken pizza. So, I thought I would combine the basics of a good burger with all the things that I love about buffalo wings and buffalo chicken pizza. And, this is what I came up with.
Ingredients:
Patties:
1 1/2 pounds ground chicken
1 large egg
3/4 cup Italian bread crumbs
4 sliced green onions
1 teaspoon kosher salt
3/4 teaspoon black pepper
1/4 cup buffalo sauce
Slaw:
3/4 cup thinly sliced carrots
3/4 cup thinly sliced red onion
3/4 cup thinly sliced celery
3/4 cup ranch dressing
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
6 artisan white dinner rolls
6 slices mozzarella cheese
6 green lettuce leaves
6 slices large red tomato
Instructions:
Pre heat grill to medium heat
To make the patties:
In a large bowl, combine all ingredients down to black pepper. Add 2 tablespoons of the buffalo sauce, reserving the remainder to pour over the top of burgers when cooking. Mix thoroughly by hand. Form into 6 1/4 patties. Make a small indentation in the middle of each burger to ensure even cooking as well as preventing burgers from plumping up. Set aside.
To make slaw:
In a separate bowl, combine all ingredients. Set aside.
Slice buns in half and place face down on heated grill. Toast approximately 3 minutes, keeping an eye on them as grill temps can vary. Remove and set aside.
Place burgers on grill and cook for 5 minutes. Flip burgers, spoon 2 teaspoons of buffalo sauce over each burger. Use bottom of spoon to spread sauce evenly over entire burger. Cook 3 minutes. Add a slice of cheese to each burger and continue cooking another 2 minutes. Internal temperature should be 165 degrees. Remove.
Top each bottom bun with a lettuce leaf, tomato slice, burger(cheese side down) slaw, top bun.
