Buffalo Turkey Tailgate Burgers
Ingredients
Slaw:
3 1/2 cups prepared “Classic Coleslaw Mix” of shredded cabbage and carrots
Leafy tops of 5 celery stalks, chopped
2 teaspoons sugar
3 tablespoons white wine vinegar
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
scant 1/4 cup canola oil
Patties:
2 pounds ground turkey
3 tablespoons hot sauce from 5oz bottle
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons red pepper flakes
1/4 cup freshly chopped oregano leaves
2 teaspoons salt
1 teaspoon freshly ground pepper
2 cloves garlic, minced
1 tablespoon canola oil
Sauce:
1/4 cup unsalted butter
remaining hot sauce from 5 oz bottle
1 cup prepared chunky blue cheese salad dressing
6 Kaiser rolls, split
Colavita olive oil for brushing on the grill
Instructions
To make the slaw: Mix the slaw and the chopped celery together in a medium bowl. In a separate small bowl, wisk the sugar, vinegar, salt and pepper together. Slowly wisk in the oil. Pour the dressing over the slaw and refrigerate until ready to serve. To make the patties: Mix together the turkey, hot sauce, cayenne pepper, red pepper flakes, oregano leaves, salt, pepper, garlic and oil in a large bowl. Using chilled hands (run under cold water) form the meat mixture into 6 patties working quickly and trying not to compact the meat. To make the sauce: Pre-heat a gas grill to medium high. While the grill is heating, place the butter in a grill-proof pan and melt. Stir in the remaining hot sauce and remove from grill. To grill the burgers: When the grill is ready, brush the rack with the olive oil. Place the patties on the grill and grill 5 minutes per side turning once. Brush the sauce on the patties twice per side while grilling. The last few minutes of grilling, place the split buns on the grill and toast until golden brown. To assemble the burgers: Place the burgers on the bottom buns and brush with sauce. Using a slotted spoon, place a generous amount of the slaw on each burger, Spread a generous amount of blue cheese dressing on the top bun and serve immediately. Serves 6
