1 lb ground chuck (80% lean 20% fat)
1 tsp onion, finely grated
1 tsp garilc, pressed
1 tblsp sea salt
1 tblsp freshly ground black pepper
4 tblsp good quality red wine
4 tblsp salted butter
Place ground chuck in a bowl, and add onion, garlic, salt and pepper. Using clean hands, fold ingredients into the meat, being careful not to compact the meat too forcefully. Once combined, add the wine and mix with hands to combine. Seperate the meat mixture into four equal portions and form patties four inches across and one inch thick, making a small depression in the center of each patty with your thumb. Place one tablespoon butter in the depression on each patty so that the butter melts into the patty as it grills. Grill over medium heat to desired doneness. Enjoy on a toasted bun, with your favorite condiments, along with the company of your loved ones.
