Burger Pibil

Pairs well with:

White Zinfandel

With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.

Ingredients

2 lb of fresh ground beef chuck.
1 cube of achiote red paste (I like el Yucateco https://www.mexgrocer.com/3118.html)
1/3 cup of white wine vynegar
1/4 cup of orange juice
1 garlic clove
salt
oregano
olive oil
1 small habanero pepper
1 cup of mayonaise
1 medium red onion
1 ripe avocado
1 large lime
Thin sliced cooked ham (as many slices as meat patties)
Sliced Monterey Jack cheese
Burger buns.

 

Instructions

Make the Pibil: Grab the cube of achiote and mix it in a blender with the vinegar, orange juice, pinch of salt and garlic clove. Add the blend to the ground beef and mix very well. Make patties and let them rest for 15 minutes. Habanero mayo: Cut the habanero in half and take out the seeds. In a blender or food processor mix the habanero with the mayonaise to make an habanero mayo; put aside. Marinated onions: Thinly slice the red onion, set it on a container with pinch of salt, 2 tablespoons of vinegar, the juice of the lime, a pinch of oregano (almost nothing) and a teaspoon of olive oil, let it marinate for at least 30 minutes. Slice the avocado Cook & Build the burgers: In a grill cook the patties. Grab a bun, spread the habanero mayo on both ends (not too much depends how hot it is).
