Burger Savoie

Ingredients

  • – Burger
  • 3 Poundground chuck (85-90% lean)
  • 5 Tablespoon butter
  • 1 Tablespoon porcini powder
  • 1 Tablespoon fresh thyme
  • 1 Teaspoon ground rosemary
  • – Pickled onions
  • 1 large red onion
  • 1 Tablespoon salt
  • 2 Tablespoon sugar
  • 1 Teaspoon fennel
  • 1 whole clove
  • 1 Teaspoon mustard seed
  • 1 Teaspoon whole black pepper
  • 2 1/2 Cups red wine vinegar
  • – Mayo
  • 1 egg
  • 1 Teaspoon garlic
  • 1 Teaspoon lemon juice
  • 1 Teaspoon vinegar
  • 2 1/2 Cups canola oil
  • 1 Teaspoon salt and pepper
  • – Arugula
  • – 1 Poundbacon
  • – Tomme de Savoie cheese
  • – 6-8 Brioche buns.

Instructions

  • Equipment:
  • 3 mixing bowls, baking sheet, foil,
  • food processor/blender, knife cutting board. Measuring spoons and Cups, cast iron skillet, serving dishes,
  • Onions
  • Start by slicing the red onion thin and mixing with
  • 1 Tablespoon salt and 2 Tablespoon sugar. Mix thoroughly in a bowl and let sit for 30 minutes.
  • While onions are sweating, begin toasting your spices over low heat in a small sauce pot. Toast until aromatic (3-5 min). Add vinegar and bring to boil. Set aside until onions are ready.
  • After 30 minutes sweating, strain liquid from onions. Strain vinegar mixture over onions and let sit for 20 minutes.
  • Bacon
  • Preheat oven to 400ˇ. Line a baking tray with foil and place bacon slices on foil. Bake 8-12 minutes to desired doness.
  • Mayonnaise
  • You will need a food processor/blender or immersion blender. Add egg, garlic, s&p, lemon juice, and vinegar to blender and mix thoroughly.
  • Slowly drizzle oil into mix while blender is on until fully emulsified.
  • Burger
  • In a large mixing bowl, combine beef, melted butter, porcini powder, thyme, rosemary, garlic. Mix only until incorporated and divide into 6-8 3-4 oz patties.
  • Season with salt and pepper before cooking in a cast iron skillet on medium high heat till done through (3 minutes per side). After flipping, place slices of Tomme de savoie on burgers to melt.
  • Buns
  • While burgers are cooking, toast buns.
  • Assemble burgers:
  • Bottom bun, arugula, burger, cheese, bacon, onions mayo, bun.
