Butter Pecan Burger with Brie and Spicy Peach Onion Jam

Ingredients:

Spicy Peach Onion Jam:
1 Tbsp butter
1 Tbsp Colavita Extra Virgin Olive Oil
1 large red onion, sliced in thin half moons
½ tsp salt
½ tsp cayenne pepper
½ c peach preserves

12 slices thick cut bacon

Patties:
2 pounds ground chuck
½ c grated red onion
1 ½ tsp kosher salt
1 tsp white pepper
1/8 c Sutter Home Merlot
4 Tbsp pecans, chopped finely
3 Tbsp cold butter

8 oz brie cheese, rind removed
6 sweet soft buns
3 to 4 tablespoons vegetable oil, for brushing on the buns and grill rack

Instructions:

Preheat a gas grill to medium-high.

To prepare Spicy Peach Onion Jam, heat butter and olive oil in a medium nonstick fireproof sauce pan. While butter is melting, slice red onion in thin half moons. Add onions, salt and cayenne to butter and oil mixture and sauté until onions are soft, about 15 minutes. Once onions are soft and beginning to caramelize, add peach preserves. Let onion mixture cook 5-10 minutes or until thickened. Once sauce is thickened, remove from grill and set aside.

Heat a large, heavy nonstick fireproof skillet on the grill. Add the bacon and cook just until done. Transfer to paper towels to drain and set aside.

To make the patties, combine the chuck, grated red onion, salt, pepper, Merlot, and pecans in a large bowl, handling as little as possible. Divide meat mixture into 12 equal portions. Slice cold butter into 6 equal ½ Tablespoon slices. Place 1 pat of butter in between two portions of meat mixture and seal the butter in the middle making sure butter is completely covered.

When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and grill about 3 to 4 minutes until browned on the bottom. Turn the patties and continue grilling 3 minutes longer. Place sliced brie cheese evenly on each patty and cover allowing to melt 2 minutes before removing burgers from grill. During the last few minutes of cooking, lightly brush oil on the cut side of the rolls. Place rolls oiled side down on the outer edges of the rack to toast lightly. To assemble the burgers place a heaping tablespoon of Spicy Peach Onion Jam on each bottom half of bun, top with a piece of bacon, then place burger on top. Top each burger with another piece of bacon and spread another heaping tablespoon of Spicy Peach Onion Jam on each bun top half. Place all top bun halves on each burger and serve immediately.
