Cajun Pork Loin Burgers

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.


2 pounds fresh ground pork loin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried red pepper flakes
1/2 teaspoon dried garlic flakes



Trim fat from the pork loin. Cut into pieces and grind using a medium blade for grinding. Mix all ingredients and let set for one half hour. Form into patties and grill at 450 degrees for ten minutes. Do not over cook or meat will be dry. Serves 6-8.
