Caliente Burger w/ Pinto Bean and Cilantro Gremolata Spread
Pinto Bean Gremolata Spread:
15 oz. can pinto beans,drained,rinced
1/3 cup cilantro, chopped
1/4 cup italian leaf parsley,chopped
2 garlic cloves,peeled,chopped
1 tsp. lemon juice
3 tbls. canola oil
1/2 tsp. salt
1/2 tsp. black pepper
2 lbs.ground chuck
1 tsp. chipotle powder
1 tsp. black pepper
1 tsp. salt
Grilled onion & chipotle mixture:
3 tbls. canola oil
2 medium yellow onions,sliced
2 chipotle peppers (in adobo sauce),chopped
*2-3 tbls canola oil for brushing grill
6 slices jack cheese
6 split white buns
Prepare a charcoal grill to medium-hot heat or heat a gas grill to medium-hi ,w/ a cover.
Drain and rince beans,place into a food processor.Rough chop the cilantro ,parsley, and garlic add to beans.Add lemon zest,lemon juice,canola oil,salt and pepper. Pulse until smooth.Cover and set aside.
In a large bowl combine the ground chuck,chipotle powder,pepper and salt.gently mixing until combined.Cover set aside.
Place a large fire proof skillet on top of the heated grill.Slice onions and chop chipotle peppers.Add canola oil ,sliced onions and chopped chipotle to the heated skillet.Cook onion mixture for 15-20 minutes over hot part of the grill.Remove mixture,cover and keep warm.
Brush grill rack with canola oil.
Form ground chuck mixture into 6 equal size patties.Place patties onto prepared grill and cook covered for 5-7 minutes per side for medium .Top each pattie with a slice of cheese for the last 2 minutes of cooking.
Place buns around the outer part of the grill cut side down for 1-2 minutes to warm.
Assembly:Place buns down cut side up.Distribute the onion and chipotle mixture among the bottom buns.Top each with a pattie.Spread the cut side of the top buns with 2-3 tbls. of the pinto bean cilantro gremolata spread,place top buns over patties.Serves 6.
