California Burger With Orange jalapeno Mayo

Ingredients

  • For Orange jalapeno Mayo:
  • 2 large Navel oranges
  • 2 Fresh medium jalapenos (1.7-2 Ounces)
  • 1/4 teaspoon Salt
  • 2/3 Cup Mayonnaise
  • 1/4 teaspoon Ground thyme
  • 1/2 teaspoon Store bought dried orange peel
  • For Patties:
  • 12 Ounces Crabmeat
  • 3 medium Avocados
  • 1 Cup minced Onion
  • 1 tablespoon Grated fresh garlic
  • 2 tablespoons Cornstarch
  • 1 tablespoon Sutter Home Chardonnay
  • 1.5 Teaspoons Lemon juice
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 4 tablespoons Olive oil, divided
  • Others:
  • 12 Ounces Cream cheese, softened
  • 1 Cup Fresh spinach
  • 6 Sweet sandwich buns, split horizontally

Instructions

  • 1. Turn the gas grill to medium-high.
  • 2. Make orange jalapeno mayo. With a vegetable peeler, peel oranges. Juice oranges into a small bowl. Mince jalapenos and remove seeds. Put salt, jalapenos, orange skins and 2 tablespoons of orange juice into a food processor and pulse until finely chopped. Drain in a colander then squeeze the mixture with your hands to remove excess liquid. Transfer the mixture into a medium bowl. Add mayonnaise, dried orange peel and thyme to the bowl and mix to combine.
  • 3. Make patties. Halve each avocado, pit and scoop avocado flesh out and dice each halved avocado small. In a large bowl, mix together crabmeat, cornstarch and wine. In another bowl, mix together avocado, lemon juice, onion and garlic then put into the crabmeat mixture bowl and mix to combine. Add salt and black pepper to the bowl and mix to combine. Divide the mixture into 6 and form each into patty.
  • 4. Brush the hot rack of the grill with 2 tablespoons of olive oil. Place buns, cut sides down, on the outer edges of the grill rack. Toast buns until the cut sides are lightly brown. Remove buns and place on a cutting board or work surface.
  • 5. Brush the rack of the grill with 2 tablespoons of olive oil. Place patties and grill patties until golden browned (2-3 minutes). Turn patties and cook the other sides until golden brown and cooked through (2-3 minutes).
  • 6. Build burgers. On both cut sides of the buns, spread orange jalapeno mayo evenly. Place 1 patty, spread 1/6 of cream cheese (2 Ounces) and put 1/6 of spinach. Put the top of the buns, orange jalapeno mayo spread sides down, to cover. Repeat this with the rest of buns, orange jalapeno mayo, patties, cream cheese and spinach to make 5 more burgers.
