Caprese Pesto Burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.


1 lb Lean Ground Beef
1 lg Egg, scrambled
1/4 c. Balsamic Vinegar
1/4 c. Pine Nuts Chopped very finely
1/2 c. Fresh Basil Leaves Chopped finely with a food processor
1/4 c. Grated Parmesan Cheese
4 slices (1/4" thick) Fresh Mozzarella Cheese (Get the stuff from the Deli section of the supermarket. It's a little pricier, but it has better flavor)
10-12 Fresh Basil Leaves
4 1/4" Thick Tomato Slices
4 Lg Potato Hamburger Buns



In a large bowl, combine Ground Beef, Egg, Vinegar, Pine Nuts, Chopped Basil Leaves and Parmesan Cheese. A large mixer would be helpful to ensure that all ingredients are evenly mixed. Once these ingredients are well mixed, form 4 patties by sectioning the mixture into 4 balls. Form the balls into rounded shapes and then "smash" flat, to approximately 1-1/2" smoothing out the sides as you go. Grill on Medium setting to desired pinkness level. Place completed burgers on the bottom bun. Layer Mozzarella slices, Basil, and Tomato slices and place the top bun on the burger.
